I wanted to share a few recipes with my readers. Instead of sweets, this go 'round will feature a breakfast dish and a tasty low-carb dinner recipe.
First up: delicious egg muffins. I eat breakfast at my desk everyday and these babies are perfect for on the go! I ate 2 this morning and shared with my co-worker and got a thumbs up from her.
I adapted the recipe a little from this one. I used:
1 lb regular Jimmy Dean sausage
8 large eggs
1/4 cup milk
1/2 red bell pepper
grated cheese
salt / pepper
Brown the sausage and put into muffin pan. Make sure you spray the pan first.
Whisk together eggs, salt, pepper, milk. Put red pepper on top of sausage, and then pour egg mixture into muffin cups. Top with cheese. Bake for 15 min at 375.
You can use any combo that you like: bacon, sausage, broccoli, green onion, mushroom....
Next time I think I might put some cheese on top of the sausage before I pour the eggs on so I have cheese throughout the muffin cup.
I have been itching to make stuffed bell peppers, and since Kyle is out of town this week it seemed like the perfect chance to try them out. I just used what items I had on hand, and they were great.
Red bell pepper (or whatever color you like)
Black beans
Rice (unless you are carb watching like me)
shredded chicken (I used rotisserie)
taco seasoning
shredded cheese
sour cream
Valentina's hot sauce
Cut top off pepper and clean out the inside. Leave whole, like a bucket, or slice in half like I did. Bake for 10-15 at 325, just enough to soften them a bit.
Take them out and pile on your toppings. Whatever your heart desires. Put them back in the oven at 350 for 15 min.
I topped mine with sour cream and Valentina's. Some pico and guacamole would have made them even better.
These both sound so yummy! I prefer the taste of egg whites, and I bet that would be good with the muffin recipe. Oooh maybe with some spinach and shrooms.
