Hotties of the World Series

You can all thank me later for this post. I tweeted several nights ago about 2 hotties that are currently fighting for the World Series title, and I thought I should just blog about these fellas.


Whether you are a Cardinals fan (me!) or a Rangers fan, both teams are bringing some cuteness to the field.

I'll start with my personal favorite:

Cold Weather

We have had some unusual weather in Tulsa lately. Last Sunday was 90 degrees while I was playing flag football, and today is said 39 degrees when I got in my car to go to work. I have slowly been transitioning some cooler weather items into my closet. I have also been running a newly found Ebay business out of my guest bedroom, but that is for a whole different post.

Kyle and I are headed to Pittsburgh 2 weeks from today and we are going to the Steelers vs Ravens game on Sunday night, in Pittsburgh, outside stadium, right on the river. Chilly? I'd say so. This made me realize that I don't really have much of a warm casual coat to wear to these types of things. So, instead of going shopping and searching for the right jacket, I took the easy way out when Old Navy offered 30% off your online outerwear order today. And thanks to Ebates, I scored 2% cash back on this order.

Cooking with Heather

I wanted to share a few recipes with my readers. Instead of sweets, this go 'round will feature a breakfast dish and a tasty low-carb dinner recipe.

First up: delicious egg muffins. I eat breakfast at my desk everyday and these babies are perfect for on the go! I ate 2 this morning and shared with my co-worker and got a thumbs up from her.

I adapted the recipe a little from this one. I used:

1 lb regular Jimmy Dean sausage
8 large eggs
1/4 cup milk
1/2 red bell pepper
grated cheese
salt / pepper

Brown the sausage and put into muffin pan. Make sure you spray the pan first.
Whisk together eggs, salt, pepper, milk. Put red pepper on top of sausage, and then pour egg mixture into muffin cups. Top with cheese. Bake for 15 min at 375.

You can use any combo that you like: bacon, sausage, broccoli, green onion, mushroom....



Next time I think I might put some cheese on top of the sausage before I pour the eggs on so I have cheese throughout the muffin cup.

I have been itching to make stuffed bell peppers, and since Kyle is out of town this week it seemed like the perfect chance to try them out. I just used what items I had on hand, and they were great.

Red bell pepper (or whatever color you like)
Black beans
Rice (unless you are carb watching like me)
shredded chicken (I used rotisserie)
taco seasoning
shredded cheese
sour cream
Valentina's hot sauce

Cut top off pepper and clean out the inside. Leave whole, like a bucket, or slice in half like I did. Bake for 10-15 at 325, just enough to soften them a bit.

Take them out and pile on your toppings. Whatever your heart desires. Put them back in the oven at 350 for 15 min.

I topped mine with sour cream and Valentina's. Some pico and guacamole would have made them even better.

Remember Me?

It has been a while since I last blogged. I have plenty to blog about, but haven't been able to find the time, which is rare.

Here is what has been going on with moi:

Work: Ugh. We switched cell phone providers (from Sprint to AT&T) and I was in charge of the whole move. For the entire company. And everyone got new iPhones. Most of these people can fix a $10,000 copier but put a new iPhone in their hand and you would think I handed them a bomb that was about to
detonate.
Just one set of the phones I had to activate


All that is over though, and I can move on to better things. Like blogging and making more Pinterest boards.

Athletics: OSU is on a roll, baby! We are 5-0 going into the game against Texas this weekend.
We lost our flag football game yesterday 46-6. The team has played together for 10 years and never lost a game. Hey, at least we scored one touchdown.

Food: I made these gems below for Sunday snack. I switched up my sweet routine and turned to something salty. Kyle likes sodium and needed a break from all the cookies.

Pepperoni Rollups: Crescent roll, string cheese, pepperoni served with marinara or ranch

Life: I ran the Warrior Dash with my brother, Erin, Monica and Justin. I'll make this summary about this real simple: I hated it. It wasn't a "dash". More like a slow, painful, slippery uphill trek with some obstacles thrown in. I did like the obstacles and thank goodness I was doing it with fun people.


I have become addicted to bidding on Ebay recently. It all started when I was looking for a classic denim jacket from Gap. And then I found all this other stuff that was super cheap and now I can't stop. I am selling items on there, too to help offset the bargains I find.

Kyle is gone to the Outer Banks for a week long bachelor party. The bachelor doesn't get there until Wednesday but they rented a house for a week so Kyle went early with 2 other guys.

We hit up the Tulsa State Fair and I ate cream cheese on a stick for the first time. It was heavenly.

This week will be spent relaxing, working out, and catching up on tv while Kyle is gone. Headed to Edmond this weekend for some soccer and to watch the OSU game Sat.

I am thinking of making raspberry beer for the ladies to have while we watch the game. And maybe some cheesy bean dip, too.

Random: I wish I lived a life where it was ok to wear these leggings.
Also, if you like pumpkin and warm drinks, please do yourself a favor and have a pumpkin spice latte from Starbucks.
